Salmon, Asparagus and Orzo Salad
We made this last night-easy and healthy! YUM! Even the kids ate a lot! And is great with asparagus being in season!
Salmon, Asparagus and Orzo Salad
1 pound asparagus, trimmed and cut into 3-inch pieces
1 cup uncooked orzo (rice-shaped pasta)
1 (1 1/4-pound) skinless salmon fillet
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup thinly sliced red onion
Lemon-Dill Vinaigrette (recipe below)
1. Preheat broiler.
2. Bring 6 cups water to a boil in a large saucepan. Add asparagus; cook 3 minutes or until crisp-tender. Remove asparagus from water with tongs or a slotted spoon, reserving water in pan. Plunge asparagus into ice water; drain and set aside.
3. Return reserved water to a boil. Add orzo, and cook according to package directions, omitting salt and fat.
4. While orzo cooks, sprinkle fillet evenly with salt and pepper. Place fish on a foil-lined broiler pan coated with cooking spray. Broil 5 minutes or until fish flakes easily when tested with a fork or until desired degree of doneness. Using 2 forks, break fish into large chunks. Combine fish, orzo, asparagus, onion, and Lemon-Dill Vinaigrette in a large bowl; toss gently to coat.

Great Grilled Tilapia
Jer made this for me last week. We have a lot of tilapia because of it being on sale at Meijer and we have had the broiled tilapia that Shelley posted on here a few too many times, so we tried this - and it was GREAT!! Here is the original recipe, we didn't make the salsa, just the marinade. Yummy!
2/3 cup extra-virgin olive oil
2 tablespoons lemon juice
2 tablespoon minced fresh parsley (we used dried)
2 cloves garlic, minced
2 teaspoon dried basil
2 teaspoon ground black pepper
1 teaspoon salt
4 tilapia fillets
Mix together the marinade ingredients and pour into a resealable plastic bag. Add the tilapia fillets and let marinate in the refrigerator for 1 hour. (We only did 1/2 hr and it was still great!) Grill the fillets until the fish is no longer translucent in the center, and flakes easily with a fork, 3 to 4 minutes per side, depending on the thickness of the fillets.

Broiled Tilapia Parmesan
We are trying to add more fish in our diet-I have always hated fish. This recipe was AWESOME! I even wanted seconds. Frozen Tilapia has been on sale at Meijer lately, buy on package get one free, meaning the fish will only cost you about $3.50.
Broiled Tilapia Parmesan
INGREDIENTS
1/2 cup Parmesan cheese
1/4 cup butter, softened
3 tablespoons mayonnaise
2 tablespoons fresh lemon juice
1/4 teaspoon dried basil
1/4 teaspoon ground black pepper
1/8 teaspoon onion powder
1/8 teaspoon celery salt
2 pounds tilapia fillets
DIRECTIONS
Preheat your oven's broiler. Grease a broiling pan or line pan with aluminum foil.
In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside.
Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish.
